Chicken Palo (Thai Cinnamon Soup)

Ingredients
- 2 pieces Cinnamon Sticks — Break in half
- 2 tsp Cloves
- 2 pieces Star Anise
- 8 cloves Garlic — Half of whole garlic bulb
- 2 tsp Coriander Seeds
- 2 tbsp Black Peppers
- 10 pieces Cilantro
- 10 pieces Chicken — Use as many as you want.
- 2 tbsp Soy Sauce
- 1 tbsp Oyster Sauce
- 2 tbsp Dark Soy Sauce
- 12 pieces Tofu Puff
- 1 tsp Vegetable Oil
- 2 tsp Salt
- 2 pieces Onion
- 6 pieces Boiled Eggs — Use as many as you want.
- 1000 L Chicken Stock — or water (chicken stock is better)
Method
Toast dry spices in the pot: cloves, cinnamon sticks, star anise and coriander seeds.

Once lightly toasted, create a spice pouch so that we can simmer it later to enhance the flavour.

Add a bit of vegetable oil to the pot and sear/pan fry the chicken to create chicken stock. Add salt + black peppers to season the chicken. When the chicken start to have light brown colors, add roughly chopped onions, garlic and stir.

Once onions and garlic are cooked/caramelized, pour chicken stock or water and stir. Make sure to deglaze the golden bits at the bottom of the pot. Add the spice pouch that you made.

Add Soy Sauce, Oyster Sauce, Dark Soy Sauce. Add Tofu Puff, Cilantro, and Boiled Eggs. Stir.

Let it simmer (medium or low heat) for about 2 hours and serve. Enjoy!

Side Note: if you can get a powder form of the soup, you can replace the spice mixture for convenience's sake. However, using this powder + the recipe above will yield a better chicken palo :)
